3 tbsp Coconut oil
1 large onion, peeled and thinly sliced
3 large garlic cloves, minced
1 tsp of fresh ginger, minced
2 tsp AFro Fusion Cuisine Harissa with Mint
1 cup of mixed Sweet mild bell Peppers ( Green, Yellow, Red)
¼ tsp cayenne pepper (or more or less to taste)
3 cups cooked kale finely chopped or ( 2 cups of frozen kale, 1 cup of spinach and 1 cup of Swiss Chards finely chopped)
1 cup of roughly chopped tomatoes or 1 Jar of Afro Fusion Joloff Sauce!
salt and pepper to taste
1.Heat oil in a large lidded pan over medium heat
2. Add the onions, chopped fresh tomato or alternatively 1 cup of Afro Fusion Cuisine Joloff sauce, bell peppers and cook for 2 minutes stirring.
3. Add the garlic and ginger, and cook for a couple of minutes more, stirring frequently
4. Add Kale, chard and spinach in batches, and stir in the Afro Fusion Cuisine Harissa until the greens are wilted
and covered with deliciousness. At the end of cooking, add a sprinkling of fresh coriander.
Cook Note – This can be a vegetarian, vegan or meat dish – I give you the base and you can add protein of your choice to this!
