African Sauteed Kale with Smoked Fish or Meat is a delicacy!
This is an amazing recipe is very light; you can also make it without meat or fish if you are a vegetarian.
3 tablespoons plus two teaspoons extra-virgin olive oil
6 cloves garlic finely chopped
2 cups cherry tomatoes finely diced
1 cup each of sweet peppers ( red, yellow, orange)
1 1/2 teaspoons fresh thyme leaves
2 pound boiled, chopped kale leaves
3 cups of finely chopped onion
1 tbs of grated fresh Ginger
1 tbs of Afro Fusion Cuisine All Purpose Seasoning
1 cup of finely chopped leek
1 lb of smoked fish or smoked meat ( optional)
Salt, pepper, a dash of chile
Coarse salt and ground pepper
1. In a large skillet, heat 1 tablespoon olive oil over medium. Add onions, ginger, garlic cloves, Afro Fusion Cuisine seasoning, and cook, stirring, until fragrant, 30 seconds.
2. Add cherry tomatoes, quartered, and fresh thyme leaves. Cook until tomatoes begin to break down, 2 minutes.
3. Add kale and remaining spices – cook until heated through, 2 minutes. Season with salt and pepper. Drizzle with the last 2 teaspoons oil and bring the heat to low
NOTE: You can Jazz up this recipe by adding, carrots , green beans , Quinoa, oat or white beans cooked. Add as much heat as you can handle
