16 0z can organic chickpeas, drained and rinsed
1/2 cup Idaho potato, boiled
1/3 cup onion, diced finely
½ cup chopped coriander leaves
2 tsp of Afro Fusion Cuisine all purpose seasoning
¼ teaspoon black pepper
½ cup toasted sesame seeds
1 tablespoon corn flour (this helps bind all the ingredients together. Alternatively, you can use one beaten egg.)
1-2 green chillies, diced (optional)
Salt to taste
Olive oil for frying if you wish to fry
1. Mix all the ingredients together and mash roughly except for olive oil – which you reserve for frying.
2. Mold the paste obtained in Step 1 to Form eight medium patties or six large ones.
3. Chill for about 10 minutes.
4. Bake in a medium heat oven ( 350 degree Farhenheit) for about 10 minutes or brush with a little oil and pan fry until golden brown on both sides (three to four minutes). You can also grill the patties on the barbeque, cooking for three or four minutes on each side.
Serve with a salad or make into a chickpea burger with a bun and salad.
