1 lb salmon steaks ( or any fish of your liking)
½ cup fresh cilantro
2-3 cloves garlic
½ bunch fresh asparagus
Salt and Pepper to taste
1 Jar of Afro Fusion Mango Chutney
1 Cup cooked rice
2 tbs of Olive Oil
Crush garlic & cilantro into a rough paste.
Brush salmon with olive oil, then sear on both sides in a saucepan.
Brush garlic/cilantro paste onto salmon, reduce heat, add asparagus (chop into 2 inch pieces if you wish). Cook until fish is nearly done to your liking.
Pour Mango Chutney onto fish, cover pan and allow to “steam” for about 2 minutes.
Turn fish to coat other side.
Serve fish over rice with sauce.
Finish the meal with a green salad.
